Making homemade blueberry muffins is incredibly simple and delicious. They are bursting with fresh blueberries and are delicate and juicy. With a delightful buttery crisp streusel topping, these blueberry muffins are simply irresistible. Having a blueberry muffin is an ideal way to begin the day.
Ingredients: Yield 8 Muffins
Dry Ingredients:
· 1 1/2 cups Flour
· 2 Tsp Baking Powder
· 1/4 Tsp Salt
· 1 cup fresh Blueberries
· ¾ cup White Sugar
Wet Ingredients:
- 1 1/2 Tsp Vanilla Extract
- ⅓ cup vegetable Oil
- 1 Egg
- ⅓ cup Buttermilk
Streusel Topping:
- ½ cup White Sugar
- 1 cup Flour
- ¼ cup Butter
- 1 Tsp ground Cinnamon
- ¼ Tsp Salt
Streusel Topping Instructions:
In a large bowl combine the melted butter, flour, salt, ground cinnamon and the white sugar with a fork until the mixture resembles coarse crumbs.
Instructions:
Preheat the oven to 375° F.
Mix the salt, baking powder, and flour in a large mixing bowl.
In a separate mixing bowl, the butter and sugar should be combined and beaten until light and fluffy. Add oil, egg, milk, and vanilla extract, whisk together with a fork until blended.
Using a fork, gradually combine the wet mixture into the dry mixture.
Mix the blueberries into the batter. Spray the baking pan, spoon the batter into the prepared muffin cups filling them right to the top. Sprinkle the streusel topping over the muffins before baking them for 25 minutes at 375° F
The blueberry muffins should be taken out of the pan and left to cool for 5 minutes uncovered
