Rum Raisin Ice Cream

A traditional summertime treat is Rum-Raisin Ice Cream. Originating in Sicily, Italy, this delectable delicacy is thick and creamy. In the Caribbean it’s one of the most popular and well-liked ice cream flavors. Rum-Raisin Ice Cream is the ultimate, sweet treat to serve at any occasion.

INGREDIENTS:

Rum-Soaked Raisins:

1/2 cup raisins 

1/4 cup White Rum to soak the raisins 

Ice Cream:

1Tbsp Vanilla Extract                       

2cups Heavy Whipping Cream

14 oz can Condensed Milk 

INSTRUCTIONS:

Place the raisins into a small bowl, cover with plastic wrap, and allow to steep for up to two days or overnight.

Before starting this ice cream recipe, put the bowl and the attachments for the mixer into the freezer for at least ten to fifteen minutes.  In doing so, you can assist the heavy whipping cream in reaching firm peaks.

Pour the vanilla extract and heavy whipping cream into the cooled bowl. Beat the ingredients to soft peaks using a hand mixer. Take good care to not over-beat the mixture.

Using a spatula, gently fold the sweetened condensed milk from the center to the side of the bowl to gently incorporate it into the whipped cream. Continue until it’s all uniformly distributed and the sweetened condensed milk is reduced to just a few tiny streaks.

Fold the combination of rum raisins into the ice cream base until it is well combined. Once the ice cream is done, transfer it to an airtight container or place plastic wrap over it. Before eating, allow to freeze for at least six hours. 

Notes: This ice cream tastes even better when kept in the freezer a day before it’s served. If stored correctly, the ice cream can be kept in the freezer for up to six months. 

Raisins: Chopped raisins readily absorb the rum. The rum must be left to soak the raisins for up to two days, since the longer they soak, the more of the rum they will absorb. 

Heavy Whipping Cream: Heavy whipping cream needs to be chilled in order to be used in homemade ice cream.

Condensed Milk: Enhances the sweetness of the ice cream and keeps it from solidifying into a block of ice. 

Vanilla: Enhances flavor.
