Pink Pasta Alla Vodka

Be creative, make the most vibrant Pink Pasta Alla Vodka sauce for your favorite pasta. This quick dish with its creamy pink sauce is a taste sensation, so flavorful and pretty. Pink Pasta is the ideal dish to make on a romantic date night.


2 cups of your desired Pasta  OR

Half box of Spaghetti 

1 large Beet, peeled and cut into 6 

2 Garlic cloves 

2 Tbsp Olive Oil 

1/2 cup Grated Parmesan 

1/4 cup Vodka 

1/3 cup Pasta Water 

1 Tbsp Lemon juice 

1 Tsp Salt 


Wash the beet, delicately flushing the root under warm water and eliminating any soil.

Preheat the oven to 425°F. Place the cut beets and the stripped garlic onto a parchment-lined sheet pan. Drizzle with Olive Oil and sprinkle with salt. Roast for 20 minutes until fork tender

Cook your favored pasta in salted water as per the bundle directions. Drain and reserve 1/3 cup of pasta water.


In a blender, place the roasted beets, garlic, grated Parmesan, lemon juice, salt, and 1/4 cup of Vodka. Blend on high for 2 minutes. Stop to scrape down the sides with a spatula and continue to blend for another 3 minutes until the sauce is smooth.

In a large skillet, pour the pink velvety sauce and bring to a simmer on medium heat. Taste and adjust the seasoning.  

If the texture is excessively thick, you can add the 1/3 cup of pasta water and continue to stir on low heat, until desired texture. Then toss the cooked pasta in the velvety sauce and continue to mix on low heat until pasta is coated. 

Decorate the velvety Pink Pasta Alla Vodka with some fresh basil and a generous amount of Feta cheese on top.
