Raspberry Mousse is a decadent dessert bursting with the taste of fresh raspberries. The perfect balance of sweetness and tartness. This luscious dessert is incredibly fluffy and creamy. It’s the ideal dessert for a special occasion or after a romantic dinner. The flavor of Raspberry Mousse is enhanced by whipped cream and a few fresh raspberries. 

INGREDIENTS:

Raspberry Purée:

2 cups Raspberries              

1/4 cup Caster Sugar            

Mousse Mixture:

1 1/4 cups Heavy Cream 

1/3 cup Icing Sugar 

1 Tsp Vanilla 

As a garnish, set aside some raspberries

INSTRUCTIONS:

In a medium saucepan, place the washed raspberries and caster sugar. Stir thoroughly and simmer over medium heat until the raspberries have softened. This ought to take seven to ten minutes. 

Blend the contents to a purée when the raspberries have softened. Pour the raspberry purée into a large mixing bowl using a sieve. 

To extract as much purée as you can, you can also use the back of the spoon. Discard the raspberry seeds that remain. 

Once it has cooled, put the raspberry purée in the fridge for at least an hour. 

Pour the heavy cream, vanilla extract, and icing sugar into a large, chilled mixing bowl. Use an electric mixer set on medium speed for about two minutes, or until soft peaks form. 

***Do not over-beat or it will turn buttery. 

To achieve a light texture, make sure the cream is cool before beginning to whip it. 

Fold the chilled raspberry purée into the whipped cream and whisk together until evenly distributed. Take care to avoid removing too much air from the mixture. 

To ensure a smooth top, pipe or spoon the mousse into each individual glass. Cover each glass with plastic wrap and refrigerate for at least 1 to 2 hours to allow the mousse to set perfectly.

Notes: Just before serving, drizzle the whipped cream over the raspberry mousse to ensure the frosting and garnishes look their best. 

Raspberries: Either fresh or frozen raspberries. You can use frozen raspberries to make this delicious dessert at any time of year. 

Caster sugar: Quickly dissolves and adds a lighter texture to the mousse. Depending on how tart the raspberry mousse is, you can change the amount of sugar. 

Heavy Whipping Cream: This is what gives the mousse its foundation and helps to create a fluffy texture. Additionally, it also has a higher fat content and gives this raspberry mousse its rich flavors and velvety textures. 

Icing Sugar: Gives the whipped cream a hint of sweetness and texture. 

Vanilla Extract: Enhances the flavor intricacy of the raspberry mousse.

Chill the finished Raspberry Mousse in the refrigerator for just a few hours. By doing this, the deflated texture of your mousse will be prevented. 

Storage: The raspberry mousse can keep in the refrigerator for five to six days if stored correctly.
