2 1/2 pounds fresh Tomatoes
6 Garlic cloves, peeled
2 yellow Onions, sliced
1/2 cup extra-virgin Olive Oil
4 cups Chicken Broth
1/2 cup chopped fresh Basil Leaves
4 Tbsp Butter
2 Bay leaves
2/4 cups Heavy Cream
Salt & Pepper to taste
INSTRUCTIONS:
Preheat the oven to 450 degrees Fahrenheit.
Wash and dry the tomatoes, then cut into halves. Arrange the peeled garlic cloves, tomatoes, and onions on a baking tray. Sprinkle with salt and pepper and drizzle with extra-virgin olive oil.
The tomatoes should burst and soften after 20 to 25 minutes of roasting.
Set the stove’s temperature to medium high. Place the oven-roasted tomatoes, onions, and garlic along with their juice in a big pot. Next, add the chicken broth, butter, bay leaves, and fresh basil leaves that have been cleaned and dried.
Bring to a boil, then simmer for half an hour without the cover. Remove the bay leaves, and
let the mixture cool for three minutes. Pour the tomato soup into a blender and process on high speed for one minute until it’s smooth.
Place the puréed tomato mixture back in the pot over low heat. Then, add the heavy cream. If the soup is too thick, adjust the consistency with a little of the warm chicken broth. Use salt and pepper to taste and adjust the seasoning. To blend the flavors, lower the heat and simmer for 15 to 20 minutes.
Notes – Extra-Virgin Olive Oil: Before roasting the vegetables, drizzle them with extra-virgin olive oil; it works well. Additionally, it keeps the veggies from drying out while they caramelize.

Onions: Any onion will work well as a flavor base for tomato soup.
