Mint Chocolate Chip Ice Cream

Nothing compares to a refreshing frozen mint ice cream treat with your favorite chocolate chips. This homemade ice cream elevates a traditional flavor with its rich and velvety texture. It is an elegantly understated dessert. The ideal treat, particularly during the summer.

Yield: 8 servings 

Ingredients:

2 cups Heavy Cream 

1 Tsp Mint Extract 

4-5 drops Green food coloring (Optional)

14 oz sweetened Condensed Milk 

1 Cup Chocolate Chips

Instructions:

Place the bowl and the mixer’s attachments in the freezer for at least ten to fifteen minutes before beginning this ice cream recipe. In doing so, you can help the heavy cream reach stiff peaks.

Empty the heavy cream into the chilled bowl. Using a hand mixer, beat the heavy cream to soft peaks while gradually adding the mint extract and green food coloring. Be careful not to over-beat the mixture.

With a spatula, carefully incorporate the sweetened condensed milk into the whipped cream by gently folding from the center to the side of the bowl. Continue until it is evenly distributed and there are only a few tiny streaks of sweetened condensed milk left.

Then, using the same gentle motion, fold in the chocolate chips until thoroughly combined. Use chocolate of high grade. 

The ice cream should then be spooned into a loaf pan or another freezer-safe container. To prevent ice crystals from forming, cover with an airtight lid or wrap in saran wrap. Freeze until hard, at least 4-6 hours. 

Before scooping the ice cream into a bowl or an ice cream cone, you might need to let it sit out at room temperature for a few minutes if it has frozen very solidly.
