Strawberry Chia Seed Pudding

Strawberry chia seed pudding is unquestionably healthy rich and fulfilling breakfast to get your day going. Chia seeds are a fantastic and highly protein-rich source of fiber. There is a rich flavor to this delicious breakfast. Enjoy this tasty pudding made with strawberries and chia seeds, topped with other natural items, for a satisfying snack or dessert

INGREDIENTS:

Strawberry Purée:

3 cups Strawberry fresh or frozen           

1/4 cup Sugar                                

1 Tbsp fresh Lemon juice                                

Chia Seed Pudding:

1 cup Milk 

1/4 cup Chia Seeds           

2 Tbsp Maple syrup 

1 Tsp Vanilla extract            

INSTRUCTIONS:

Strawberries should be cleaned and patted, the stems removed, and the berries neatly chopped.

Combine the strawberries (fresh or frozen}, sugar, and the lemon juice. The lemon juice makes all the difference to light up the flavors. Blend and purée for about 1 minute all the ingredients until smooth.

After processing the mixture for one more minute, or until the strawberries are smooth, use a rubber spatula to scrape down the sides of the bowl.

Note: Keep the strawberry purée in the refrigerator until ready to use. 

The puree can also be frozen for up to three months, or it can be kept for up to four days in the refrigerator in a sealed container.

Chia Seed Pudding:

In a glass jar, pour your milk of choice and add in the chia seeds. After stirring the milk and seeds together, drizzle in vanilla extract and maple syrup or other preferred sweetener. 

Stir until all the chia seeds have been distributed evenly into the milk. There shouldn’t be any clusters. Let it stand for about 10 minutes and give it another stir. The pudding should be covered and refrigerated for at least 2 hours or overnight.

Allow it to sit in the refrigerator overnight for the greatest texture, as it becomes quite creamy and pudding-like.

Note: ifyour chia seeds pudding is still liquid and didn’t set as it ought to, then add about 

1 Tbsp of chia seeds to the pudding and whisk well. Allow it to sit for about 1 hour and your pudding will thicken up. 

Prior to serving, place the chia seed pudding at the base then layer the strawberry purée on top and consistently add toppings just before serving. 

Garnish with any of your favorite toppings.
